Dairy pancakes

Every nation has its own rich, centuries-old traditions of great antiquity. They are present everywhere: in clothing, daily life, language, songs, food and anywhere else. Especially interesting is the Ukrainian tradition of cooking a variety of national dishes. So, the Ukrainians have a list of mandatory dishes for each important holiday. Is it possible to imagine Christmas without kutya and Easter without paskha (Easter cake)?

Pancakes are also considered to be a traditional Ukrainian dish. There is a variety of recipes for pancakes while all of them have the same basic ingredients — milk, sugar, salt, eggs and oil. For their preparation one can use various sorts of flour. The toppings can be quite different as well. Everything depends on the ingenuity of a housewife. Apparently, nobody would refuse to regale himself to pancakes with honey, apples, soft cheese, condensed milk, mushrooms, meat, etc.

Here are some recipes for milk pancakes. They will be very useful, because these pancake recipes are proved by much more than one housewife, and the ingredients are given in exact proportions that guarantee a wonderful, delicate flavor.

Milk Pancakes Recipe 1
To prepare you need the following ingredients:
1 liter of milk "Rud’";
4 eggs;
500 g flour;
2 tablespoons oil;
1.5 tablespoons sugar;
0.5 teaspoon salt.

Directions:
1. Beat up eggs and sugar in a large bowl.
2. Heat some milk, salt it and mix thoroughly with the beaten eggs and sugar.
3. Gradually add flour in the mixture, stirring constantly to avoid lumps.
4. Add a little baking soda, salt and oil. Stir.
5. Add remaining milk and whip again. The batter should be reasonably smooth.
6. Heat the frying pan.
7. Brown the pancake on both sides.

Milk Pancakes Recipe 2

To prepare you need the following ingredients:
4 cups milk "Rud’";
1 egg;
600 g flour;
5 teaspoons butter "Rud’";
1 tablespoon sugar;
25 g yeast;
1 teaspoon salt;
3-4 tablespoons olive oil.

Directions:
1. Heat 3 cups of milk and dissolve the yeast in it.
2. Add a half of tablespoon of sugar, salt, egg yolk and melted butter "Rud’". Stir.
3. Add 300 g of flour.
4. Knead the batter. Cover it with a towel and put in a warm place for 2 hours for fermentation.
5. When the batter is ready, add the rest of warm milk.
6. Add remaining flour and sugar.
7. Beat up the white and gradually pour it into the batter.
8. Knead the batter again and let it rest.
9. Heat the frying pan. Do not stir the batter while cooking.
10. Brown the pancake on both sides.

Interesting facts about pancakes

The oldest milk pancakes recipe dates back to XV century. It is written in English.

The largest milk pancake was baked in 1994 in Rochdale. Its diameter was 15 meters and it weighed 3 tons.

The world record for tossing pancakes into the air belongs to Ralph Lau from Leipzig. He managed to toss a pancake 416 times for two minutes. Another record-holder Mike Kutsakre ran a marathon, continually tossing a pancake for 3 hours 2 minutes and 27 seconds.

People in France believe that the wish conceived while turning a pancake will come true if you keep the frying pan in one hand and a coin in the other.
