“Khutorok Selyans’kiy”
Butter “Khutorok Selyans’kiy” is considered to be the product intended for average consumer. It is being produced from high-quality raw material by application of conventional technologies: by continuous whipping and transformation of cream with high concentration of fat. For the purpose of butter “Khutorok Selyans’kiy” production the raw materials of the first and second grade are being used. High-quality cream is to be subjected to high-temperature (thermal) processing in order to provide the preservation of high-quality factors during shelf-life of the product.
Butter “Khutorok Selyans’kiy” is being packed by application of traditional format for Ukrainian consumers.
By physicochemical and organoleptic indices, butter is to meet the following requirements:
Physicochemical indices:
- Mass fraction of fat — 73%;
- Mass fraction of moisture — mot more than 25%;
- Mass fraction of dry agents — 2.5%.
Taste and Smell: Pure, clearly indicative taste, typical for creamy butter with flavor of high pasteurized cream free of foreign foul tastes and smells.
Consistence and Appearance: Homogeneous, plastic, solid; surface of butter being slit is to be shining and dry in appearance.
