Nobody for sure knows who was a pioneer in cooking of the shish kebab. It is only known that the nomads from Eurasia were among those who roasted it just as far back as in the V century.
There are a lot of recipes for shish kebab marinade sauces. If you are not a devotee of such traditional components as vinegar and mayonnaise, you can try to roast the shish kebab with marinade sauce based on cultured milk foods being rather popular in the East.
Kefir-based marinade sauce adds gentleness and savor to the dish. As the meat becomes more delicate, while relishes become not so spicy due to kefir, it is often preferred in case when the outdoor recreation party is attended by the children.
Kefir-based marinade sauce for chicken kebab
Ingredients:
Chicken leg quarters – 1 kg; kefir or riazhanka (fermented baked milk) – 1.5 glass; black allspice pepper – ? teaspoon; ground nutmegs - ? teaspoon; lemon (1/4); kari relish – ? teaspoon, garlic cloves – 4 pcs; onions – 4-5 pcs; salt to the taste.
Cooking:
Cut chicken leg quarters into 5-6 approximately same parts. Salt the chicken meat and pour with lemon fresh juice.
Now, take the garlic, 2 or 3 onions and grind it in the blender. Upon the mixture is ready, add kefir, kari relish, ground nutmegs and black pepper. Then, thoroughly stir the marinade sauce.
The rest of onions shall be cut in rings.
Put the cut chicken meat in the double-wall sack and pour with kefir-based marinade sauce. Put over the onion rings and thoroughly mix. Then, the meat shall be left for next 4-6 hours.
Thread the pieces of meat alternated with onion rings onto the skewer.
When roasting kebab on the embers, do not forget to pour it several times with the marinade sauce. By doing so, kebab will be succulent and full of pleasant spices tints
Pork shish kebab in kefir
Ingredients:
Pork chuck – 1.5 kg; kefir (3.2% fat content) - 500 ml; sugar powder – 1-1.5 teaspoon; onions – 5-7 pcs; salt and pepper to the taste.
Cooking:
Rinse and cut chilled pork in pieces. Put it into glazed or glass vessel. Slice or roughly grate the half of onion and add it to the kebab
In the time of stirring the meat, add some salt and pepper.
Add kefir and stir kebab again. Make sure that the meat is soaked with kefir; however it shall be not submerged at any case. Add sugar powder and stir it once more.
The rest of onions shall be cut in rings and put on kebab. Close the meat with a lid.
Such kebab shall be marinated for 10-12 hours in refrigerator, while for 3-4 hours if left under room temperature.
Before roasting the pork shish kebab in kefir, thread the pieces of meat alternated with onion rings onto the skewer.
In the time of roasting, kebab shall be regularly turned and poured with water, bread kvass, wine or beer. So cooked pork shall be rather succulent and free of burnt spots.
Kefir-based marinade sauce for shish kebab
Cooking shish kebab with kefir-based marinade sauce is considered to be of great pleasure. As opposed to vinegar or lemon juice, kefir does not make meat dry or sour. Marinade sauce 1.
Ingredients for 3 kg of meat: kefir – 3 glasses; onions – 3 pcs, dill, parsley and basil.
Cooking:
Slice dill and parsley greens. Cut onions into semi-rings. Tear basil and meant into small pieces. Put all ingredients in the bowl, thoroughly stir and pour with kefir. Now, the marinade sauce is ready! You need only to marinate the meat.
Marinade sauce 2.
Ingredients for 3-4 kg of meat: kefir – 1 liter; vegetable oil – 3 tablespoon; onions – 4 pcs; black ground pepper; salt to the taste.
Cooking:
Shell the onions, cut it in rings and put in the bowl. Add some salt and pepper to the taste. Stir the onions by hands in order to get the onion sap. Then, add kefir and oil. Thoroughly stir the mixture. Now it is ready! You can use it for pouring the meat.
Marinade sauce 3.
Ingredients for 3 kg of meat: kefir – 1 liter; onions – 500 g; Khmeli suneli – 1 tablespoon; black ground pepper; salt to the taste
Cooking:
In order to cook the said marinade sauce, cut the onions in semi-rings and put them in the bowl. Then, add some salt, pepper and Khmeli suneli. Thoroughly stir the mixture. Pour with kefir and stir the ingredients again. Now, the marinade sauce is ready!
