Cook traditional Caucasian dish — chebureki

Appetizing fried pies stuffed with filling came to us from the Middle East and Central Asia. Every self-respecting housewife has her own secret of making this dish in the Caucasus. Historically chebureki were cooked only with meat. Much later people began to make chebureki not only with meat, but also with cottage cheese or cheese.

How to cook chebureki: classical kefir recipe

You need the following ingredients for cooking kefir chebureki:

Dough:

  • 1 glass of kefir;
  • 1 egg;
  • 3.5 glasses of flour;
  • 1 teaspoons of salt;

Filling:

  • 400 g of minced pork meat;
  • 3 onions;
  • 9 peppers in corns;
  • 100 ml of boiled water.

Cooking instructions:

Whip kefir, salt and egg with the fork. Sieve flour into the kefir mixture while mixing slowly. When it is difficult to stir, put the dough on the table and continue kneading by hand. Then put the dough into the plastic bag and leave it in warm place for an hour.
For filling pass onions through the sieve and mix with minced meat. Add salt and pepper. Pour water to the minced meat and stir all well.
Divide the dough into equal parts of small size. Roll out the dough boll very thinly. Lay out the minced meat on the one side full-length. Fold up cheburek in half and cut edges with scroll shears. Fry chebureki in a large amount of oil for 8-10 minutes at medium fire.

Advice: to make kefir chebureki juicier, put them in the freezer for 10 minutes before frying.

Chebureki with cheese

You need the following ingredients for chebureki cooking:

Dough:

  • 200 g of flour;
  • 1 egg;
  • 250 ml of mineral water;
  • 1 teaspoons of salt;
  • 2 teaspoons of sugar;
  • oil for frying.

Filling:

  • 300-400 g of cheese;

Cooking instructions:

Prepare the dough and leave it to rest for 20 minutes. Meanwhile grate cheese. Divide the dough into equal parts of small size. Roll out the dough boll thinly and put cheese filling. Fold up in half and pinch edges with the fork. Then fry it in oil. Because of cheese filling, frying time of this kind of chebureki is a minute or two, not more. Chebureki with cheese are ready for serving.

Chebureki with cottage cheese

You need the following ingredients for cooking:

Dough:

  • 4 glasses of flour;
  • 0.5 package of margarine;;
  • 1 egg;
  • salt, pepper to taste;
  • oil for frying.

Filling:

  • 1 kg of cottage cheese;
  • 6-7 onions;

Cooking instructions:

Knead dough of flour, soft margarine, egg while adding water slowly (¾ glass). Put the dough to the fridge.
Mash cottage cheese and salt. You may pass cottage cheese through the sieve - it will be softer.
Chop onions and mix with cottage cheese. The filling is ready. Divide the dough into equal parts. Roll out the dough boll and put filling. Fold up and pinch edges with the fork. Fry chebureki in oil and serve them up hot. Enjoy your meal!
