Oladky (thick pancakes) have a long history, centuries-old traditions and an absolutely rich heritage, made up by numerous recipes. But what do we know about the dish today, except for the fact that oladky are made from milk and kefir? There are likely to be few people whose knowledge about them goes beyond average.
May we bring to your attention several interesting facts about oladky, name, recipes history, formulas and the best recipes. With no intent to ruin the traditions, we will mention milk and kefir recipes as well but a bit later on.
The first record of oladky dates back to the middle XVI century, but up to 1938 there was no entrenched spelling of the word. The word oladky comes from “oleum” that is oil.
The oladky made from sour dough and fried in oil were the prototypes of the modern ones. There appeared a large number of recipes: potato, millet, semolina oladky. The word “oladky” itself implied rather a certain shape of the pancake than its ingredients or formulas.
Modern oladky is a ready-to-serve food which looks like fried small pie of flimsy dough, kneaded with water, milk and kefir, flour and eggs. Dough, worked with soda and yeast is what makes oladky crumbly and different from usual pancakes.
Probably any woman with good housekeeping skills will agree that this dish is very easy to cook and nice to serve to the guests. Make garlic oladky and you’ll get a nice snack, make meat oladky and you’ll get an excellent second course, add some sour cream “Rud” to them, some sugar, jam or fruits and you’ll get the best dessert ever.

Milk oladky
I. Milk oladky with apples
Mind please, apples are not the necessary ingredient. It can be substituted by 100-150 grams of raisins, home-made curds, grated cheese and grinded nuts.
You need the following ingredients:
flour - 0.5 kg;
“Rud” milk - 2-2.5 glasses;
yeast - 25 grams;
eggs - 2;
“Rud” butter - 2spoonfuls;
salt - 0.5 teaspoon;
apples - 3-4;
granulated sugar;
Formula:
- Dissolve yeast in warm milk, add butter, eggs, sugar, salt. Knead it, add some flour.
- Cover it with a towel and put into a warm place for fermentation.
- Peel some apples and dice them up, put into the dough (if it’s ready). Or you can pour the dough onto the frying pan with the heated oil using a sppon moistened by water and put apples on top.
- Fry oladky on both sides and sprinkle them with sugar.
II. Milk oladky with cheese
You need the following ingredients:
flour - 2 glasses;
“Rud” milk - 1.5 glasses;
eggs-2;
cheese - 250 grams;
salt;
butter;
Formula:
- Mix yolks with salt, add some milk and flour.
- Add some frothed whites of the eggs and mix carefully.
- Dice up the cheese.
- Heat the frying pan with the melted butter. Put 1 spoonful of dough onto the frying pan at a time and some cheese on the top.
- Fry on both sides.
- Serve with some melted butter on top.
III. Milk oladky with honey
You need the following ingredients:
2 glasses of flour;
milk “Rud”- 2 glasses;
eggs - 2;
salt;
6 spoonfuls of honey;
2 spoonfuls of cognac;
sugar;
Formula:
- Add some eggs (one by one) into the flour stirring it.
- Add a glass of milk and blend the ingredients until smooth.
- Add the rest of milk, stir again, cover with a towel and let it rise within 30 mins
- Fry oladky on both sides on the heated frying pan.
- Mix honey with cognac and smear hot oladky with it. Roll them and sprinkle with sugar.
Kefir oladky
IV. Kefir oladky with raisins
You need the following ingredients:
A glass of flour;
3 eggs;
1 spoonful of sugar;
0.5 teaspoon of salt;
2 spoonfuls of raisins;
2 spoonfuls of “Rud” butter;
2 glasses of kefir “Rud”;
Oil for frying;
Formula:
- Froth eggs with salt, sugar and “Rud” butter
- Add a glass of kefir and flour
- Knead the dough, adding the rest of kefir
- Add some washed raisins and soda (softened)
V. Kefir oladky with carrots
You need the following ingredients:
0.5 kg of carrots
2 eggs
0.5 glass of flour
1 glass of kefir “Rud”
0.5 teaspoon of salt
1 spoonful of sugar
4-5 spoonfuls of oil
Formula:
- Peel some carrots, grate them.
- Mix with eggs, sugar and salt.
- Add some flour and kefir. Knead the stiff dough.
- Heat up some oil on the frying pan and put the dough on it with a spoon
- Fry on both sides. Serve with sour cream.
