How to cook solyanka

The well-known dish of Russian cuisine has a rich history. It is still unknown why solyanka is named like this. It is a common knowledge that it was a dish called “selyanka”, with the meaning of rural, rustic. All people cooked it all together: everyone brought something: someone fish, someone meat, someone vegetables. This whole mix got later “solyanka” name. According to another version, “solyanka” has always been “solyanka” because different pickled products composed the dish. Modern recipes differ from the historical, but the basic ingredients remain unchanged.

You need the following ingredients for cooking:

  • 300 g of beef meat;
  • 200 g of smoked meat;
  • 200 g of sausage;
  • 6 wieners;
  • 1 carrot;
  • 3 onions;
  • pickled cucumbers;
  • 1-2 tablespoons of flour;
  • 3 tablespoons of tomato paste;
  • greens, spices to taste.
  • sour cream fro dressing.

Cooking instructions:

Cook soup stock of beef, bay leaf, salt and pepper. Cut boiled meat into strips and put back into the soup stock. Dice pickled cucumbers and put into the soup stock. Fry julienne sliced sausage, smoked meat and sausages in the pan. Put all in the stock. Cut onions into rings and fry in pan with flour and tomato paste for a few minutes. Pour this all to the stock. Add spices and greens to taste. You may put some spoons of sour cream into the solyanka dishing up.

You need the following ingredients for cooking solyanka with mushrooms:

  • 300 g of fresh mushrooms;
  • 50 g of dried mushrooms;
  • 1 onion;
  • 1 carrot;
  • 2 tablespoons of tomato paste;
  • 1 tablespoon of flour;
  • olive oil;
  • 2 pickled cucumbers;
  • black olives;
  • 7 cherry tomatoes;
  • salt, pepper, bay leaf;
  • greens.

Cooking instructions:

Pre-soak dried mushrooms and boil. Cut dried and fresh mushrooms into small pieces and fry in a pan for 6-7 minutes. Peel of and fry onions. Grate carrot and add to onions. Add tomato paste and flour to this mix. Stir all and stew about 5 minutes. Add mushrooms and stir all well again. Pour water, add salt, pepper and bay leaf. Add the tomatoes and olives after 7 minutes, and cook for 5 minutes. Sprinkle with greens before serving. Solyanka with mushrooms is ready.
