Krucheniki - meat rolls, that came from Ukraine

Ukrainians have been known as cooking masters of tasty and delicious meat dishes for a long time. Krucheniki are among these dishes. The name “krucheniki” came from the word “roll”, in Ukrainian it sounds “krutit”. It is no coincidence, because you need to wrap the filling into the steak in the process of cooking. Filling may be different: mushrooms, dried prunes, cheese or carrots - whatever you wish!

You need the following ingredients for cooking krucheniki (6 portions):

  • 600–700 g of meat for strip steaks;
  • 500 g of field mushrooms;
  • 1 onion;
  • 60 g of cheese;
  • 3-4 garlic cloves;
  • 150 g of sour cream;
  • 1 teaspoon of flour;
  • 20 g of butter;
  • 2-3 tablespoons of vegetable oil;
  • salt, pepper to taste;
  • bundle of greens.

Cooking instructions:

Make strip steaks. First cut steaks into thickness of no more than 1.5 cm. Tenderize meat on both sides and season it with salt and pepper. It is necessary to cut onions and mushrooms into small pieces for filling. First fry onions in butter in a pan, then add mushrooms and cook until complete evaporation of the liquid. Generously sprinkle with chopped garlic and greens. Leave it to become cold. Mix grated cheese with cool mushrooms. Add salt and pepper. Put the filling on the each steak. Fold it up in roll and fasten with tooth pick or thread to keep form of krucheniki during frying. Fry it until golden brown. Stew krucheniki with mushrooms for 30 minutes in the soup stock after frying. In 10 minutes until cooked mix sour cream and flour and add it all to the soup stock with krucheniki. Stew it for the time left. Serve it up garnished and with cream sauce.

Porky krucheniki

You need the following ingredients for cooking:

  • 1 kg of pork meat;
  • 150 g of field mushrooms;
  • 1 bell pepper;
  • 100 g of cooked rice;
  • 30 g of butter;
  • 1 onion;
  • bundle of greens;
  • salt, pepper to taste;
  • butter for frying.

Cooking instructions:

Chop meat and season it with salt and pepper. Prepare the filling. Dice field mushrooms and bell pepper. Fry chopped onions in the butter. Add mushrooms and bell pepper. After 4-5 minutes add cooked rice and chopped greens. Mix everything. Put the filling on the each steak, fold it up in roll and fasten with tooth pick or thread. Fry it until golden brown. After that, stew krucheniki for 30 minutes in the soup stock. Krucheniki are ready for serving.

Krucheniki with dried prune

You need the following ingredients for cooking of krucheniki with dried prune:

  • 500 g of pork meat;
  • 200 g of dried prune;
  • 200 g of cheese;
  • salt, pepper to taste.

Cooking instructions:

Make pork strip steaks. Cut prunes into small pieces, grate cheese. Put prunes and cheese on the steak. Fold it up in roll and fasten with tooth picks. Then put kruchenyky into a saucepan, pour the soup stock and cook it in the oven for 30-35 minutes. You can serve it up as a separate dish or with garnish. Enjoy your meal!

Beef krucheniki in multicooker

You need the following ingredients for cooking:

  • 1 kg of beef;
  • 2 carrots;
  • 1 onion;
  • 200 g of beans in own juice;
  • 0.5 glass of sour cream;
  • 3 tablespoons of vegetable oil;
  • salt, pepper to taste.

Cooking instructions:

Fry onions and carrots in 1 tbsp. of oil in multocooker at a temperature of 160 degrees for 10 minutes. Mash beans (without juice) in bowl. Add fried onions and carrots, season with salt and mix well.
Cut meat into portions, tenderize on both sides. Put the filling on steak, fold it up in roll. Fasten with tooth picks or thread. Fry rolls in vegetable oil until golden brown. Mix sour cream and water, season with salt and pepper. Pour this mixture to krucheniki and cook in the same mode for 30-35 minutes. Serve up the hot dish.
