Cooking national dishes: dumplings, the recipe for all occasions
One of the most popular and beloved by many generations of Ukrainians national dishes are dumplings, the recipe of which is as simple as the ready dish is tasty. Dumplings with meat, potatoes, mushrooms and cabbage serve as an excellent option of a substantial and tasty main dish. However, the not less popular dumplings with sweet cheese and fresh berries successfully replace the delicious desserts in the Ukrainian cuisine. We offer a few recipes of cooking dumplings with the most popular fillings.
Traditional dumplings with potatoes
To cook homemade potato dumplings, the recipe of which is familiar to every housewife, you need to knead the unfermented dough and prepare the filling. You will need:
- 1 glass of water;
- 1 egg;
- 1/2 teaspoon of salt;
- 2 glasses of flour;
- 4-5 pcs. of potato;
- 1 pcs. of onion;
- 2-3 tablespoon of vegetable oil.
Crack in an egg to slightly heated water, salt and stir thoroughly. Add flour gradually and beat properly; you should obtain fairly dense and elastic dough as the result. Wrap it into a film and leave for 30-40 minutes to “reach” the proper condition.
At this time, prepare the filling. To do this, boil peeled potatoes in slightly salted water. Clean and grind and slightly saute the onion in a vegetable oil until golden. Hot potatoes should be mashed properly and mixed with fried onion, add pepper to taste.
The dough should be kneaded once again and divided into portion pieces as convenient. Put a slightly cooled filling into the portion pieces. The edges of the dough should be thoroughly fastened together, boil the obtained dumplings with potatoes for 5-7 minutes (until they float) in the slightly salted water. The ready dish is especially tasty with 21% sour cream produced by “Rud” TM.
Sweet dumplings with cheese
Those who like dairy products can try the recipe of dumplings with cheese that are not only aromatic and delicious but also nutrient. To cook them you’ll need:
For the dough:
- 1 glass of whey or water;
- 1 egg;
- 2 glass of flour;
- pinch of salt;
For the filling:
- 400 g of cheese;
- 1-2 eggs;
- sugar to taste.
Sieve the flour heap, make the deepening on top and gently crack an egg into it, salt to taste. Start stirring gradually adding water or milk. If necessary, add flour and knead it till you get smooth and elastic dough.
For the filling to be juicier, add eggs and sugar to taste to the cheese and mash it thoroughly till smooth. “Pack” the prepared filling into the dough and boil it in salted water. We recommend serving the dumplings with cheese, the recipe of which can be diversified by adding raisins to the stuffing, with “Gold” butter and the sour cream produced by “Rud” TM.
Salty dumplings with cheese
The alternative to the sweet cheese dumplings can be salty dumplings with cheese, the pungent flavor of which can optionally be seasoned with spices and greens. The dough for this dish is prepared similarly to the previous recipe but the filling is completely different. Instead of raisins and sugar add enough salt and chopped fresh herbs (green onion, dill, parsley) and spices to taste to cheese.
Steamed dumplings with blueberries
With the onset of summer you can treat your family with “vitamin” dumplings with blueberries which if cooked on steam are especially bold and juicy. Kefir dough is more suitable for this type of dumplings. You need the following ingredients for it:
- 1 glass of kefir produced by “Rud” TM;
- 1 egg;
- 2 glass of flour;
- 1 teaspoon of yeast powder;
- pinch of salt.
All ingredients should be gradually put together and carefully kneaded into the elastic dough which should “rest” for 30-40 minutes. At this time, wash and dry the blueberries (or other berries you prefer). Divide the dough into portion pieces, put the berries with sugar into the portion pieces and carefully tighten the edges together. The steamer or the structure of a saucepan and colander can be used for steaming. When cooked, the dumplings will double in size, therefore, leave an extra space. It takes 5-7 minutes to cook the dish, and then you can enjoy the delicious dessert.
