Rice with vegetables in various cuisines of the world

Since the ancient times, rice has been known for its dietary properties and benefits for the human. For this reason, it is widely used in various cuisines of the world to cook healthy and tasty main dishes such as risotto with vegetables, pilaf and tsymes with meat, paella and biryani. There are some secrets of how to cook pilaf or risotto for it to be especially delicious, delicate and afford pleasure to the most demanding gourmets.

Central Asian cuisine: how to cook pilaf

Traditional for the Central Asian countries pilaf with vegetables and meat is incredibly mealy and aromatic, and the secret of this lies in the technology of separate cooking of ingredients. For pilaf you will need the following:

  • 1 glass of rice
  • 400 g of meat
  • 1 bulb onion
  • 1 carrot
  • 1 bell pepper
  • 1 garlic clove
  • spices and salt to taste

The perfect dishware for pilaf is a pot or deep pan in which the ingredients stew. Well washed rice is boiled in salted water (ratio 1:2) on a slow fire without stirring.

At the same time minced meat fillet is fried in a hot vegetable oil until golden. Then add diced onion, carrot and bell pepper, chopped garlic and fry for another 5-7 minutes, after that add a bit of broth, salt, spices and simmer on a slow fire until ready. At the final stage you can mix rice and vegetable component and stew the mixture slightly or serve them separately.

Italian cuisine: risotto with vegetables

Sophisticated Italian cuisine is famous worldwide for its risotto with vegetables, seafood or meat. There are lots of variants of cooking this delicate side dish, and we offer a vegetarian recipe for which you need:

  • rise - 200 g
  • onion - 1 pcs.
  • carrot - 1 pcs.
  • bell pepper - 1 pcs.
  • tomato - 2 pcs.
  • green peas - 50 g
  • broth - 0,5 l.
  • vegetable oil - 2-3 tablespoons.
  • salt, spices, greens – to taste.

The risotto is cooked in a deep frying pan with a lid, in which the vegetable oil is heated and the chopped onion is slightly fried. Then the rice of special kind with high starch content is added and fried. The broth is gradually added in small quantities to allow it to be completely absorbed. After 5-7 min. of slow stewing the diced bell pepper and carrot is added, in another 7-10 min. green peas, tomatoes, salt and spices are added, then stew until ready.

Rice with vegetables in Ukrainian cuisine

In our national Ukrainian cuisine a special rice meal hasn’t been invented yet, therefore every housewife cooks rice with vegetables to her own taste. The recipe of one of these meals suggests using frozen vegetable mixes produced by “Rud” TM to get aromatic and delicate side dish. To prepare delicious rice the following ingredients are required:

  • 1 glass of long-grain rice
  • 2 glass of water or broth
  • 250-300 g of vegetable mix
  • 3-4 tablespoons of vegetable oil

Fry it slightly and add rice. Fry the side dish for several minutes until the rice becomes transparent, then add water or broth, spices and greens, cover with a lid and simmer for 15-20 minutes on a slow fire until ready.

Rice with vegetables, recipe for multicooker

For those who like useful and healthy food we can recommend simple recipe of “vitamin” rice with vegetables prepared in a multicooker. To cook it you will need the following ingredients:

  • 1 glass of rise;
  • 2 glass of broth;
  • 1 package of the vegetable mix;
  • 2-3 tablespoons of butter.

Put butter and vegetables into the multicooker’s bowl, turn on the frying mode for 10 minutes. Then add rice, spices, salt to taste and pour the broth. Close the lid of the bowl, choose the optimal mode of cooking for 30-40 minutes. The result is an aromatic and mealy side dish.
