Crescent rolls with cherries suited to every taste

Delicate crescent rolls with cherries of the yeasted pastry
he pastry of the yeasted dough has a particular popularity because it is unusually delicate and light. To cook crescent rolls with cherries you need:
- 150 g of sour cream
- 2 eggs
- 250 g of flour
- 150 g of sugar
- 75 g of butter
- 5 g of dry yeast
- 150-200 g of cherries
Mix sour cream, eggs and sugar and whip them thoroughly, then add melted butter (“Selyanske” or “Khutorok” butter by “Rud” is good for this pastry). Dissolve dry yeast in a small amount of warm water and pour it to the pastry. Add flour little by little and beat thoroughly until you get soft and smoothed pastry. Wrap it in the plastic food wrap and put in a cold place for an hour.
Meanwhile, prepare the filling: wash, dry and remove kernels. Divide the pastry into several equal parts and roll them up into the round layers as thick as 1 cm. Cut the circles into portion “segments”. Put the filling on the wide parts and roll the crescent rolls with cherries up. If you wish, you can add sugar to berries, but in this case it is necessary to pinch the edges slightly to prevent the juice to leak. Put the half-prepared rolls on the baking tray, cover them with an egg yolk, preheat oven to the 180°C and bake them for 20 minutes.
Puff pastry with cherries
Confectionery factories offer a wide range of puff-pastry products with fruit jam and we recommend cooking crispy puff-pastry crescent rolls with cherries. The following ingredients are required for the dough:
- 4 glasses of flour
- 150 ml of water
- 450 g of butter
- 2 eggs
- a pinch of salt
- ½ teaspoon of lemon juice
The ingredients must be properly cooled for the successful preparation of puff pastry. Add eggs, salt, lemon juice to water and mix the ingredients until smooth. Add 3 glasses of flour to the resulting mass and knead the elastic dough. Mix solid butter with flour until smooth.
Roll out the “rested” dough into a thin layer and put the butter mass equally on top, wrap the dough ends as an envelope and gently roll out the dough into a thin layer. Wrap it into 4 layers and place in a cold place for 30 minutes. Roll out the cooled layer to the thickness of 1 cm, fold it once again into 4 layers and place into the refrigerator. Repeat for 2 or 3 times.
At the final stage, divide the dough into portion triangles, put the prepared cherries and enwrap the crescent rolls. If there is no time to prepare the dough, you can use frozen puff pastry “Chef” by “Rud” TM. Bake the crescent rolls in the oven preheated to 2000С until golden and enjoy an exquisite dessert.
Crispy sandy paste for fruity croissants
You can also prepare delicious and nutritious crescent rolls with cherries using the sandy paste. To make it, put together 200 g of soft butter, 200 g of sour cream, 1 egg and 100 g of sugar, and mix until smooth. Then gradually add 2 teaspoons of baking powder and 400 g of flour to the mixture and quickly knead soft dough.
In order the prepared baking remained soft and crispy, place the prepared dough in the refrigerator for 30 minutes, then divide it into portion pieces, roll them out into thin layers and cut them into triangles. Put the cherries with sugar on the wide edge and slightly wrap the corners inwards, then carefully enfold the crescent rolls with cherries.
