Favorite cherry cake a la homemade
The season of fresh berries and fruits makes the most part of women recall their favorite family recipes of desserts: the recipes of pies and cakes with cherries, strawberries and other delicious fillings. The abundance of juicy berries turns the traditional pastry into the more delicate and flavored desserts, that appeal to the ones who have sweet tooth and help to restock the vitamins. Chocolate cake with cherries
For the festive occasions we recommend you to bake a cherry cake, the recipe of which is quite simple, but the result looks festive and dainty. To bake this culinary masterpiece you need the following ingredients:
Pastry
- 3 eggs
- 150 g of flour
- 2 teasp. of baking powder
- 2 tablesp. of cocoa
- 150 g of sugar
- “Selyanske” butter, “Rud” TM - 100 g
Filling
- 300 g of cherries
- 100 g of sugar
- 50 ml of brandy
Cream
- 0.5 l of dairy cream
- 150 g of powdered sugar
- vanilla
Separate egg whites from yolks, whip them separately with equal portions of sugar. Mix dry ingredients, add soften butter and mash them up thoroughly. At first, add yolks to the buttery paste, mix until smooth, then add egg whites and mix gently. Put the resulting pastry into the prepared pan, preheat the oven to 180°C and bake the cake for 20-25 minutes.
While the cake bakes, prepare the filling: cover cherries with sugar and let them release juice, then boil them for 2 minutes. Take out berries and mix them with brandy. Boil the syrup until slight thickening. In 7-10 minutes, pour brandy in the syrup. Whip thoroughly the pre-chilled cream with a powdered sugar and vanilla until thick and stable mass.
At the final stage of the chocolate cake with cherries cooking, divide the ready cake in two layers, saturate them with syrup and cover the lower layer with whipped cream and “drunken” cherries. Put the second layer on the lower layer, spread thoroughly the remaining cream on the sides and top of the cake and sprinkle it with a grated black chocolate.
Cherry cake “Polenytsya”
Crumbly short pastry and flavored cherry filling together with an unusual “construction” of this cherry cake guarantees a success and praise for your confectionery skills. Take 1 kg of pitted cherries and cover them with 150 g of sugar, leave for about half an hour and pour out the juice.
Take for the pastry:
- 200 g of 21% “Rud” sour cream
- 250 g of butter
- 450 g of flour
- 200 g of sugar
- 1 teasp. of baking powder
Mix soften butter thoroughly with sugar, add sour cream mixed with baking powder and mix until smooth. Add flour little by little and beat until you get a soft pastry. Leave it for an hour in the refrigerator and then divide it into 15 equal pieces, roll each piece out to get a 20x7 cm rectangle. Lay out cherries in a neat line in the middle of each rectangle, carefully pinch together the edges and put the shaped “wood piles” on the baking tray. Preheat the oven to 200 degrees and bake the cake for 15-20 minutes.
Meanwhile, whip 800 g of sour cream with 250 g of powdered sugar. Put ready “wood piles” on the foil, shaping a pyramid according to the principle 5-4-3-2-1, cover each layer lavishly with a whipped sour cream. Decorate the cake, if you wish, with the coconut flakes or grated chocolate and put it to thicken and soak for 12 hours in the refrigerator.
Cheesecake with cherries
Cheesecake with cherries will be particularly timely in a hot summer day. The recipe of a cheesecake with cherries is better to be served cold. A sponge is a basis of this cake. To cook it you need:
- 2 eggs
- 2 tablesp. of flour
- 1 teasp. of baking powder
- 3 tablesp. of sugar
- 1 tablesp. of cocoa
Whip eggs thoroughly with sugar until the volume increases by 1.5-2 times. Mix the remaining ingredients and add them to the egg mass, mixing thoroughly. Put the resulting pastry in the oiled pan and bake for 20-25 minutes.
Take fresh berries to decorate the cake (in winter you can use frozen cherries by ”Rud”). Cook syrup using 1 glass of boiling water and 100 g of sugar, cover berries with it and let them draw for 2-3 hours.
Meanwhile, prepare the cream: take 400 g of cottage cheese and 400 g of sour cream. Steep 10 g of gelatin in the 100 ml of water, melt it and pour it little by little in the cottage cheese mass. Put the sponge cake in the springform pan, cover it with a layer of cream and decorate with cherries. Cover the cherries with a fast-thickening fruit jelly and put the cake in the refrigerator.
Sponge cake with cherries, strawberries and kiwis
The next recipe is perfect for children's holiday because of the fruit component. For this cake you need three layers of a sponge cake, which you can cook following the previous recipe, as well as:
- 150 g of cherries
- 150 g of strawberries
- 2 kiwis
and for the cream:
- 300 g of sour cream
- 200 ml of cream
- 200 g of sugar
Whip the cream ingredients thoroughly with the help of a mixer. Put cream and pitted cherries on the first layer, cover it with the second layer. Put cream and kiwi pieces on the second layer and cover it with the third layer. Cover the whole cake with cream and decorate it with the strawberries, cut in halves.
